About Hoseki Sushi
Hoseki Sushi is a family-owned restaurant that recently opened its second location in Downtown Oakville. This restaurant focuses mainly on serving just "Sushi", delivering the best fresh varieties of quality sushi to their valued customers to experience the real authentic Sushi flavour from Japan. Hoseki's daily selection consists of varieties of 25 different menu items of freshly prepared seafood and also offers some rare-find seasonal specials. Their premium selected ingredients are imported directly from Japan and across the country every week to ensure customers can enjoy the same quality of freshness and flavours. Unlike in many local Sushi restaurants, Hoseki makes their Nigiri Sushi in its Japanese originality, the traditional “Edomae Style”, invented in Tokyo during Japan’s Edo period 1818-1830. Compared to regular Nigiri sushi, Edomae sushi uses sake yeast “Akas” instead of rice vinegar. Their sushi consists of 4 main ingredients: Top grade Japanese short grain white rice, Edo red rice vinegar, roasted Nori (seaweed), a light fresh wasabi seasoning, fresh cut aged Sashimi (raw fish) and topped with Chef's choice garnish selections. The ingredients may seem basic, but each component is carefully prepared at the right ratio and temperature to complement the fish atop the sushi.

Omakase, a Japanese term meaning "Leaving respectfully to Chef's choice", refers to a meticulously crafted course curated by the Master Sushi Chef. Customers have the ability to sit at the sushi bar, observe, and interact directly with Hoseki's Head Sushi Chef. His smooth knife skills, rice shaping, and precise blow torch technique contribute to the majestic cooking performances. Preparing one piece of fish at a time, the chef will announce its name, origin, and answer your questions as he serves. The stories and recommendations shared by the Chef create an intimate and authentic Sushi dining experience. Omakase is not a common offering in many local sushi restaurants so this spectacle is very popular and a highly recommended experience.
